Banana Chocolate Chip Protein Muffins

I am on a journey to become a better baker...and these are giving me hope. My family (kids included) devoured these in 48 hours. Ingredients are clean, and they pack a great protein punch.

Banana Chocolate Chip Protein Muffins


Ingredients

  • 3/4 cup old fashioned oats

  • 3/4 cup almond flour

  • 1/2 cup vanilla protein powder (I use Orgain)

  • 1 tsp baking soda

  • 1 1/2 tsp baking powder

  • 1 tsp salt

  • 1 tsp cinnamon

  • 1 large egg

  • 3 mashed bananas

  • 1/2 cup Greek yogurt

  • 1 tsp vanilla

  • 2 tablespoons maple syrup

  • Optional: 3/4 cup of mini chocolate chips


Directions

  1. Preheat oven to 375°F.

  2. Add oats to a blender and blend until It makes a fine, flour like consistency.

  3. Combine all dry ingredients into a mixing bowl.

    1. 3/4 cup old fashioned oats

    2. 3/4 cup almond flour

    3. 1/2 cup vanilla protein powder (I use Orgain)

    4. 1 tsp baking soda

    5. 1 1/2 tsp baking powder

    6. 1 tsp salt

    7. 1 tsp cinnamon

  4. Mash bananas and combine wet ingredients in a bowl

    1. 1 large egg

    2. 3 mashed bananas

    3. 1/2 cup Greek yogurt

    4. 1 tsp vanilla

    5. 2 tablespoons maple syrup

  5. Fold in dry ingredients, add in chocolate chips if desired, combine with spoon.

  6. Add mixture into greased muffin tin (I grease with avocado oil). Fill each cup about 3/4 to the top.

  7. Bake at 375°F for 5 minutes, then drop temperature to 350°F and bake for 10 minutes on the middle rack.
